   We are frequently asked about acreage production in terms of gallons/cases.  We use some rules of thumb to help forecast the amount of wine we'll be producing.
 
     Generally speaking, our vineyards should produce about 2.5 tons per acre.  Each varietal has individual crop yield expectations, but 2.5 tons per acre is a good average.  Converting tons to gallons is pretty simple.  We assume about 150-175 gallons of finished wine per ton harvested.   Whites tend to yield a bit less, thus the 150 gallons, where reds can be more up toward 175.

     Remember, wine grapes are very small in comparision to table grapes.  Wines grapes are no bigger than a common marble, and often considerably smaller.  The deepness and richness of wine color comes from the skin of the grape.  As a result, we want wine grapes to have more surface area relative to the juice produced.  Small berries with concentrated juice is optimum.

     As for numbers of bottles from a ton of fruit, that's pretty simple math too.  Multiply the number of gallons of finished wine by 5.  There are approximately five standard 750 ml bottles of wine per gallon.  I say approximately because there is always loss in the winery throughout the production process; sometimes it's loss through human error ("Grab that hose!") and some loss is due to the equipment.  The filter, for example, takes about three gallons just to fill all the liners and pads, which means three gallons of wine gets left inside once the wine is filtered.
 
     In summary, reds give about 175 gallons per ton ~875 bottles per ton ~ 73 cases per ton.  So if your red grapes are producing about 2.5 tons it equates to about 180 cases of finished wine. As long as you're not losing too much!

     Whites produce about 150 gallons per ton ~750 bottles ~ 62 cases per ton.  So if our white grapes, the Albarino, produce as they should, we can expect about 2 tons, or 300 gallons per acre ~ so about 125 cases of white.
